Description
Blanc de Blanc, meaning white from white in French is a sparkling variety made purely
from white grapes. At Dromana Estate, we have made ours from 100% Chardonnay
grapes sourced from the Macedon ranges, this was the last of the fruit that we
sourced from outside our vineyard.
This Blanc de Blanc was made in the traditional méthode champenoise, which requires a
secondary fermentation in the bottle. This secondary fermentation is
accomplished by adding a mixture of sugar and yeast to still wine. This wine is
then bottled and capped, with a bottle cap similar to ones found on beer
bottles – not a cork.
The yeast acts on the sugar and the resulting carbon dioxide remains trapped in the
bottle. Quality sparkling wines are usually left on their lees for several months,
even years. This Blanc de Blanc has been left for 8 years before it was
disgorged; meaning the cap was removed and replaced with the traditional cork
with wire cage.
The delicate combination of yeast and toast to the nose, followed by zesty citrus flavours. A wonderful sparkling perfectly paired with fish & shellfish, particularly oysters as well as Parmesan based dishes.
